You've been naughty, so here's the scoop ...
Nothin' for you, but snowman poop! Last night Miss Thang and I whipped up a batch of snowman poop, aka peppermint marshmallows. This year I borrowed my mom's Kitchen-aid professional mixer, and oh my goodness I was in heaven because I didn't have to hold my hand mixer for 20 minutes while it threatened to burn itself out. Somehow Igby ended up with a glop on his nose, and I still have powdered sugar on my clothing, but they are so worth it, so yummy! They even pass the "real marshmallow test" - they puff up in the microwave. Since I had such a great mixer to use we made a double batch. This morning I brought some to work, and the rest will be given to my mom for her co-workers and friends and neighbors who stop by and visit :) 4 comments from 4 users

It's actually quiet fluffy Twinkie, hehe ;) No, it's not hard at all! RECIPE INGREDIENTS Confectioners' sugar2 1/2 tablespoons unflavored gelatin 1/2 cup cold water 1 1/2 cups granulated sugar 1 cup light corn syrup 1/4 teaspoon salt 1/2 cup water 1 teaspoon peppermint extract (or flavoring) RECIPE METHOD Generously dust an 11 x 7 1/2 x 2-inch baking dish with confectioners' sugar. Sprinkle gelatin on 1/2 cup cold water in large bowl (the bowl you'll be mixing everything together in, make sure it's big, the stuff will triple in girth) to soften; set aside. Heat granulated sugar, corn syrup, salt and 1/2 cup water in 2-quart saucepan over low heat, stirring constantly, until sugar is dissolved. Heat to boiling; cook without stirring to 250 degrees F on a candy thermometer or until small amount of mixture dropped into very cold water forms a ball that holds its shape but is pliable; remove from heat. Slowly pour syrup into softened gelatin while beating with electric mixer on high speed. Beat on high speed until mixture is white and has almost tripled in volume. Add peppermint extract; beat on high speed 1 minute. Quickly pour into pan. Sprinkle with confectioners' sugar, patting lightly with hands. Let stand uncovered at least 8 hours. Turn pan upside down to remove marshmallow mixture onto board. Cut into shapes with miniature cookie cutters or knife dipped in water to keep from sticking. Last night I just made sure a ton of powdered sugar was on the top and then cut it into squares with my pizza cutter - the powdered sugar falling between cuts keeps stuff from sticking. Then just pat cut edge in powder that probably all over the cutting board by now and toss the marshmallows into a container. Store in airtight container at room temperature up to 3 weeks. Yield: 40 marshmallows (1 per serving) I am going to try this with different flavorings and extracts. Was thinking of using grand marnier instead of water to soften the gelatin for a little kick ;) posted by
